Seasonal Beer (Pumpkin Ale) Chili

It’s that season! Well, almost..We’re definitely in that in between weather when it’s cold in the AM then blazing hot by noon, but I’ll take it.

I’ve been in the mood for chili and have been seeing these seasonal ale’s in the supermarket so decided to pick a pumpkin ale up! It’s brewed with pumpkin & spices and knew it would give my beer that heartiness, spice and a bite! I added your typical and not so typical seasonings like chipotle peppers & brown sugar and it came out so good - the boo had two big bowls!

Ingredients (Makes 5-6 servings)

  • 1 lb ground beef, 80/20

  • 1 medium white onion, chopped

  • 4 garlic gloves, finely minced

  • 1 jalapeño, diced (seeds can be removed if you don’t want the spice)

  • 1 tablespoon tomato paste

  • 1, 15z oz can diced tomatoes

  • 1 12fl oz seasonal beer - I picked up the DogFish Head Pumpkin Ale at Whole Foods but I’m sure a lot of your local stores have seasonal beers.

  • 1, 15z ox can black beans, drained

  • 3 chipotle peppers in adobo sauce, chopped + 1 tablespoon of the sauce that the peppers come in

  • 1-2 tablespoon ancho chili powder (you can use regular chili powder if you can’t find this one)

  • 2 tablespoons dark brown sugar

  • 1 tablespoon smoked paprika

  • 1-2 teaspoon garlic powder

  • 1-2 teaspoon onion powder

  • 1-2 teaspoon cumin

  • 2-4 of dashes of worcestershire sauce

  • EVOO, salt & pepper

  • Toppings

  • Diced avocado

  • Sour Cream

  • Chopped jalapeños

  • Chopped red or white onions

  • Shredded cheddar cheese

    Directions

  • In a heavy stock pot, add 2 tablespoons of extra virgin olive oil to the pot on medium heat, let heat up.

  • Sauté onions & jalapeños until soft about 3-5 minutes, add salt & pepper.

  • Once onions are soft add garlic and sauté until fragrant about 60 seconds.

  • Add ground beef and cook until done, add salt & pepper.

  • Add tomato paste and stir to combine and let paste cook about 1-2 minutes.

  • Add chili powder, brown sugar, cumin, smoked paprika, chipotle peppers with sauce, worcestershire sauce, onion powder, & garlic powder. Stir to combine.

  • Add beer, black beans & can of diced tomatoes.

  • Let simmer on medium low heat for about 30 minutes. Taste to adjust seasonings like more brown sugar, more salt & pepper or more spice!

  • Top with any toppings you like!
