Easy Shakshouka
3 ripe tomatoes, roughly chopped
1 tablespoon tomato paste
1 tablespoon paprika (smoked would be great if you have)
1 tablespoon cumin
1 teaspoon red pepper flakes
1/2 yellow onion, chopped
2 garlic cloves, minced
1/2 red pepper, chopped
Salt & pepper to taste
How to:
sauté garlic, onions & red pepper until soft. Season with salt & pepper
Add tomatoes & tomato paste and the rest of the seasonings.
Cover with lid and let tomatoes cook down for about 15-20 minutes
Check on sauce. If too think add about 1/4 cup of water.
Taste and season with more salt & pepper
Create little holes in the sauce and crack eggs. Cover the pan to lightly bake the eggs keeping the center runny. (6 min)
Serve with lots of buttered bread!
