  • 3 ripe tomatoes, roughly chopped

  • 1 tablespoon tomato paste 

  • 1 tablespoon paprika (smoked would be great if you have)

  • 1 tablespoon cumin 

  • 1 teaspoon red pepper flakes 

  • 1/2 yellow onion, chopped 

  • 2 garlic cloves, minced 

  • 1/2 red pepper, chopped 

  • Salt & pepper to taste 

How to:

  • sauté garlic, onions & red pepper until soft. Season with salt & pepper

  • Add tomatoes & tomato paste and the rest of the seasonings.

  • Cover with lid and let tomatoes cook down for about 15-20 minutes

  • Check on sauce. If too think add about 1/4 cup of water. 

  • Taste and season with more salt & pepper

  • Create little holes in the sauce and crack eggs. Cover the pan to lightly bake the eggs keeping the center runny. (6 min)

  • Serve with lots of buttered bread!
