Shrimp & Steak Fajitas
Ingredients
- 1/2lb -1lb hanger steak (major key)
- 1/2lb jumbo shrimp, peeled & deveined
- 1/2 white onion, sliced
- 1 poblano or green pepper, sliced (whatever you can find)
- 1 avocado
- 1/2 cup cilantro
- 1 serrano or jalapeño pepper, finely chopped - 1 lime, juiced
- 1/2 teaspoon salt
- olive oil
- salt & pepper to taste & whatever your favorite all purpose seasoning is
- flour or corn tortillas & limes for serving
- 2 tablespoons of salted butter, melted
Directions
- season your hanger steak with salt and pepper and set aside (let it come to room temperature before searing)
- season your shrimp with salt & pepper or whatever your favorite seasoning is. Set aside
- In a cast iron skillet (gets the sizzle!) on medium heat, add 2 tablespoons olive oil. add your hanger steak and cook on each side for 2-4 minutes for medium (depending how thick your steak is). take out and let it rest for 5 minutes until cutting. LET IT REST!
- in the same skillet, add the sliced onions and peppers. You can add alittle more olive oil if needed. only cook for 3 minutes as you still want the onions and pepper still a little crunchy. key for fajitas!
- while your peppers are cooking, add in your shrimp at the last minute and cook for 2 minutes. don’t overcook or your shrimp will taste rubbery
- whole your shrimp and peppers are cooking, cut your steak. add your steak and all the juices back into the skillet. combine all together!
- in a small bowl, combine & mash avocado, 1/2 teaspoon salt, serrano or jalapeño pepper, cilantro and lime juice. taste to see if it needs more salt!
- to get extra fancy, fry your tortillas in a little bit of oil or if you have a gas stove, char them over the gas for 30 seconds!
- enjoy with some sliced limes & melted butter on the side!
