Ropa Vieja
my second favorite cuban dish is ropa vieja! shredded beef slow cooked for hours in a tomato sauce with spices. you throw it in your slow cooker and come back 8 hours later to the best dish ever. serve over rice and picked red onions are mandatory! recipe below!
Ingredients
- 1lb flank steak
- 1 small onion, sliced
- 1 red pepper, thinly sliced
- 1 green pepper, thinly sliced
- 4 garlic cloves, finely minced
- 2 bay leaves
- 1 beef bouillon cube
- 2 tbls so tomato paste
- 1 can goya tomato sauce (8oz)
- 1 can goya olives, drained (with pimentos)
- 1 tbls sazon
- 1-2 tbls cumin (a must)
- 1-2 tsp oregano
- 2 tomatoes, quartered
- 1 cup beef stock or water
- Salt & pepper to taste
Directions
- heavily season the flank steak with salt & pepper. In a pan on medium high heat, sear the flank steak on both sides to lock in all the juices.
- set your crockpot on low (8 hours) add everything except the steak in and stir to combine. add salt & pepper, to taste.
- add in the flank steak and cover the slow cooker.
- at the 6 hour mark check on the beef and start to shred the beef. add the olives and let cook for another 2 hours, until tender.
- serve with rice, beans & pickled red onions!
Pickled Red Onion
- 1/2 red onion, sliced
- 1/2 cup white vinegar
- 1 teaspoon salt
- how to: combine all together and let sit for about an hour.
