the best cuban comfort food..

my second favorite cuban dish is ropa vieja! shredded beef slow cooked for hours in a tomato sauce with spices. you throw it in your slow cooker and come back 8 hours later to the best dish ever. serve over rice and picked red onions are mandatory! recipe below!⁣


Ingredients ⁣
- 1lb flank steak⁣
- 1 small onion, sliced ⁣
- 1 red pepper, thinly sliced⁣
- 1 green pepper, thinly sliced⁣
- 4 garlic cloves, finely minced ⁣
- 2 bay leaves⁣
- 1 beef bouillon cube ⁣
- 2 tbls so tomato paste⁣
- 1 can goya tomato sauce (8oz)⁣
- 1 can goya olives, drained (with pimentos)⁣
- 1 tbls sazon⁣
- 1-2 tbls cumin (a must)⁣
- 1-2 tsp oregano⁣
- 2 tomatoes, quartered ⁣
- 1 cup beef stock or water⁣
- Salt & pepper to taste ⁣



Directions⁣
- heavily season the flank steak with salt & pepper. In a pan on medium high heat, sear the flank steak on both sides to lock in all the juices.⁣
- set your crockpot on low (8 hours) add everything except the steak in and stir to combine. add salt & pepper, to taste.⁣
- add in the flank steak and cover the slow cooker. ⁣
- at the 6 hour mark check on the beef and start to shred the beef. add the olives and let cook for another 2 hours, until tender. ⁣
- serve with rice, beans & pickled red onions!⁣



Pickled Red Onion ⁣
- 1/2 red onion, sliced ⁣
- 1/2 cup white vinegar ⁣
- 1 teaspoon salt ⁣
- how to: combine all together and let sit for about an hour. ⁣
