Quarantine sucks. I miss going out to dinner…what about you?

Yes, I can make pasta at home but there’s honestly noting like siting down at a restaurant, ordering multiple rounds of drinks and a beautifully plated piping hot pasta. So in my quest to feel like I was being served and I was craving pasta (ya know…that time of the month lol) I decided to make homemade pasta and a spicy garlicky tomato sauce with jumbo lump crab tossed in the sauce…can you say, AMAZING!

I love making my own tomato sauce. It’s actually super easy and once you make your own you will never purchase the can ever again! You can add whatever herbs you feel like..throw some basil in there or rosemary! Whatever you like!

Ingredients (serves 2-3)

  • 1/2lb spaghetti or linguini

  • 1 cup jumbo lump crab meat (already cooked)

  • 4-5 garlic cloves, thinly sliced

  • 1/2 cup or more dry white wine (Pinot Grigio is what I normally use)

  • 1/2 teaspoon or more red pepper flakes

  • 1 28oz can whole peeled tomatoes (my fave brand is San Marzano)

  • salt & pepper to taste

  • garnish with parsley

Directions

  • Pour the whole can of tomatoes into a bowl. Using your hands (yes, your hands lol) squeeze all the tomatoes so your essentially crushing them, set it aside.

  • In a separate pot, boil water and heavily salt the water when it comes to a boil. My rule of thumb is to start with 1 teaspoon of salt. Be sure to taste the water and make sure you can taste the salt! Your noodles need flavor too!

  • In a saute pan on medium heat, with 1-2 tablespoons of olive oil add your garlic cloves. Let them saute until just about golden brown (about 2-3 minutes). What you’re doing is bringing out the flavors of the garlic and getting it toasty!

  • Add salt, pepper & red pepper flakes and stir to combine. Add white wine and let the alcohol burn off, about 1 minute.

  • Add the hand crushed tomatoes, stir to combine and let the tomatoes cook down and the sauce will start to reduce and thicken up. Give it about 20-30 minutes. Taste to adjust seasonings

  • When the pasta is almost ready add in your crab meat and stir to combine. Straight from the boiling water, add the noodles along with 1/4 cup pasta water. Toss to combine!

  • Note: The starch in the pasta water helps the sauce stick to the noodles. Don’t ever throw away your pasta water!

  • Garnish with parsley!
