white wine dijon chicken
My taurus twin John made a version of this years ago & i needed something quick for the weeknight!
Chicken thighs are always a good idea & I always have my pantry staples of dijon mustard & stone ground mustard. added some dry white wine to deglaze the pan, thru in the sauce, small potatoes & nuzzled the chicken in the pan then finished it off in the oven = tender af & delish!
Ingredients (serves 2)
2 bone-in, skin on chicken thighs
seasoned to your liking with s&p and whatever everyday seasoning you like
2 tablespoons dijon mustard
2 tablespoons stone ground mustard
1 teaspoon honey
1 tablespoon dark brown sugar
1 heaping tablespoon of your favorite hot sauce
1/2 cup dry white wine
Directionspre-heat oven to 350
on medium high heat, add some EVOO to a cast iron & sear chicken thighs skin side down to get a good sear, about 2-3 minutes. flip and sear on the other side. youβre not cooking fully
turn heat on low. add 1/2 cup white wine to deglaze the pan and scrap all the goodness from bottom of the pan.
add dijon mustard sauce, stir to combine
add halved potatoes and chicken thighs (skin side up)
spoon over sauce, put it in the oven to finish cooking until chicken is fully cooked & potatoes are fork tender!
