I’m not really a breakfast person unless it’s brunch but I know how important that first meal of the day is.

Since we’ve been working from home my morning routines are MY JAM! I usually start my day between 6:30am/7am - lemon water, journal and then my coffee. I like this time to myself because it sets the tone for my day. Sometimes I FT with my best friend, Loni who is always up at that time lol or I go on my morning walks. I really miss my morning walks since it’s been cold out.

Anyway, I’ve been trying to get better at actually eating breakfast and recently got HOOKED to chia seed pudding. I was always turned off because of the texture but recently I was on set for a content shoot for my day job and they had chocolate chia seed pudding catered for breakfast. I was legit that meme when I first tasted like gross but then it was good! lol

Chia seeds have a ton of health benefits like omega 3 fatty acids, fiber anddd antioxidants so it’s a win in my book. I also am obsessed with making my own granola, it’s so easy and cheaper then buying that $10 granola from the grocery store.

Ingredients

  • 3 tablespoons chia seeds

  • 2 cups oat milk

  • 1 tablespoon unsweetened coco powder

  • 1/2 teaspoon vanilla extract

  • some brown sugar or honey to sweeten a little bit

  • any fruit for garnish!

Brown Sugar Cinnamon Granola

  • 2 cups old fashioned oats

  • 1/4 cup dark brown sugar

  • 1 teaspoon vanilla extract (I eyeballed this)

  • 1/2 teaspoon of cinnamon (I eyeballed this)

  • 1/4 teaspoon almond extract (optional but this is amazing)

  • some oil to coat everything like olive oil, grape-seed oil, avocado oil

Directions

  • Granola - pre heat oven to 350, combine everything in a bowl and coat with oil so it’s moist but not super wet. Add the granola to a tray pan with parchment paper, spread it out so it’s evenly distributed. Put it in the oven for 9 minutes then toss the granola so it evenly cooks and cook for another 9 minutes. Let cool and done!

  • Chia Seed Pudding - Add oat milk, vanilla extract, coco powder and honey or sugar. Whisk to combine everything together. In a bowl add the chia seeds and let it sit overnight in the fridge.

  • Serve with plenty of fresh fruit, granola and a drizzle of honey! Sprinkle some maldon sea salt for a pop of salt…AMAZING! ENJOY!
