evelyn’s brussels + sweet potatoes!

i’m home with momma ev for a couple of weeks and although her wifi is v spotty, she talks to me during my work calls and yells at me to be quiet during her yoga sessions lol, the best part of being home is her cooking! no matter what i cook, her food is always better (that momma love in cooking is just different). one of my favorites is her brussels & sweet potatoes. she made me love brussel sprouts years ago! very easy recipe below . happy cooking! 🤎👩🏾‍🍳

ingredients:

-1lb brussel sprouts, chopped into halves

-1 sweet potato, diced 

-2 garlic cloves, roughly chopped

-salt, pepper & EVOO 

-finished with pure maple syrup & @traderjoes balsamic glaze 

directions:

-pre-heat oven to 400

-season & massage sweet potatoes + brussels in bowl with salt, pepper, extra virgin olive oil and garlic cloves. 

-let it roast in the oven for 30 minutes until sweet potatoes & brussels are tender. I like the brussels & sweet potatoes to get kinda crispy and burnt. Let the natural sugars come out!

-drizzle with balsamic glaze & maple syrup & stir to combine.
