Brussel Sprouts Salad
I like to switch it up sometimes from my regular tuscan kale salads and make a brussel sprouts salad! for this one i thru in some arugula and made a quick vinaigrette. recipe below for the vinaigrette(will be on blog too)!
-1/2 lb shaved brussel sprouts (either thinly sliced or in a food processor with the slice attachment)
Ingredients (Makes 2 Servings of Salad)
-1/2 cup arugula
-1/2 small shallot, finely chopped
-1 teaspoon dijon mustard
-1/4 cup red wine vinegar or apple cider vinegar
-1/2 cup EVOO
-1 garlic clove, finely grated or minced
-salt & fresh cracked pepper
-combine all ingredients in a mason jar and shake or combine all ingredients except the EVOO in a bowl and gradually whisk in the EVOO like a crazy person so it emulsifies and combines together into a dressing! (keep this in your fridge in an air tight container)
-pour dressing over your salad and add any toppings you like!
