I LOVE CHEESEBURGERS!

Sometimes there is nothing like a juicy, cheesy cheeseburger especially during the summer. A slightly charred cheeseburger on the grill, OMG there is nothing like it!

I’ve been home for a couple of weeks and I’ve been craving one. After I made the copycat Shake Shack burger for Access Hollywood (still can’t believe that happened) I’ve been dying to make another one. Recently I purchased Rodney Scott’s new cookbook which is all about grilling. I really want to learn how to grill. My Dad and boo thang are really good grillers and that is a def a skill I want to master.

Anyway, there was a pimento cheese recipe in there and let me tell you…I. LOVE. PIMENTO CHEESE! It’s a super southern thing and very fattening but delicious. It’s also great for a grilled cheese too or to dip in crackers. I remixed the one in the book because I didn’t have all the ingredients and made a little smash burger with copy cat shack sauce and it was EVERYTHING.

Pimento Cheese Spread

  • 8oz sharp cheddar cheese on the block, freshly grated

  • 4 oz cream cheese, softened

  • 1/2 cup mayo

  • 1 small can of pimentos, drained

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon onion powder

  • 1/2 teaspoon ground mustard powder

  • 1/2 teaspoon smoked paprika

  • 1/2 teaspoon cayenne pepper

  • salt & pepper, to taste

    Ingredients For The Shack Sauce

  • 1/4 cup mayonnaise

  • 1 tablespoon Dijon mustard

  • 1 teaspoon ketchup

  • 1/4 teaspoon kosher dill pickling brine

  • Pinch of cayenne pepper

    Additional Ingredients 

  • 1 hamburger potato bun

  • 2 tablespoons unsalted butter, melted

  • 1/4 pound ground beef (80/20) formed into 1 inch thick balls 

  • Green leaf lettuce 

  • Plum tomato, sliced about ¼ inch thick 

  • Sliced white onions

  • American cheese

  • Salt & pepper, for seasoning the hamburger meat

Directions

  • Combine the mayo, cream cheese and shredded cheddar cheese together. Add all the seasonings and drained pimentos. Season to taste and set aside.

  • Make shack sauce in a small bowl. Taste and set aside. 

  • Heat up a cast iron skillet on medium low heat, brush hamburger bun with melted butter and place hamburger buns buttered side down in the pan for 2-3 minutes until it gets golden brown. Remove and set aside 

  • While the buns are browning, heavily salt & pepper the ground beef. 

  • Remove the hamburger buns and then increase heat to medium heat. Add the ground beef and using a spatula firmly smash the burger until it forms into a thin round patty about ¼ inch thick. Cook without touching it for 2ish minutes. Flip and add American cheese on both burgers and let American cheese melt.  

  • Add the cheeseburgers onto the potato buns then top with lettuce, tomato & add the shack sauce on the top bun and pimento cheese on the bottom and ENJOY!
