Happy Juneteenth!

Juneteenth is a celebration in the Black community - it’s freedom, joy, community and love! Oh and all the good food!

I partnered with Pinterest this week to host a live cooking session and make one of my favoriteeeeeee sandwiches. Honestly, I love sandwiches lol and a fried whiting sandwich is in my top 5! It’s iconic, it’s Black AF and it’s so damn good covered in hot sauce and ONLY served on white bread. Don’t give me wheat bread! Also, the homemade tartar sauce is *chef’s kiss!

Ingredients

Tartar Sauce 

  • ½ cup mayo 

  • ½ cup sour cream 

  • 1 tablespoon capers 

  • 2-3 tablespoons dill pickle relish 

  • ½ teaspoon fresh dill, chopped

  • 1 teaspoon fresh lemon juice or just squeeze half a lemon

  • Pinch of kosher salt & black pepper

  • A couple of dashes of hot sauce (reserved for sandwich as well) 

    Fish Assembly

  • 2 skinless & boneless whiting filets 

  • 2 eggs, whisked 

  • 1 cup yellow fine cornmeal 

  • 1 teaspoon kosher salt

  • 1 teaspoon black pepper 

  • 1 teaspoon smoked paprika 

  • 1 teaspoon onion powder

  • 1 teaspoon garlic powder 

  • 2 pieces white bread  

  • Vegetable oil for frying (about 1 cup) 

    Directions

  • For the tartar sauce combine all ingredients together and refrigerate for at least an hour so the flavors can meld together.

  • For the fish, salt and pepper the whiting and set aside.

  • Whisk two eggs together in a bowl and set aside

  • Season the cornmeal with paprika, garlic powder & onion powder and combine all together.

  • Take the fish and coat it in the egg wash and then dip it into the seasoned cornmeal and shake of the excess cornmeal.

  • Heat about 1 cup of vegetable oil to 350 degrees and gently drop your whiting in the pan and let it fry for about 2-4 minutes. Whiting is thin and cooks super quick!

  • Place on white bread with lots of tartar sauce, hot sauce & all the whiting you want!
