miso glazed cod

In the cravings section of this blog, here is a miso glazed cod recipe! It’s insanely good and saves you a $100 dinner receipt by making this at home. My one tip, is let the cod marinate AT LEAST 24 hours. The flavor deepens once you let it marinate longer. I didn’t use sake because I didn’t have it but I had some dry white wine in my fridge and decided to improvise. Try it below and let me know what you think!
Ingredients
2 cod filets
1/4 cup brown miso
1 tablespoon rice vinegar
1/3 cup dry white wine or sake
2 tablespoons sugar
1/3 cup mirin ( a sweet sake)
1-2 tablespoons sriracha or sambal oelek
DirectionsAdd the mirin, sake & sugar in a sauce pan and over medium heat, whisk until the sugar dissolves. It takes, about 2 minutes.
Remove from the heat and whisk in the miso, rice vinegar and sriracha. Let the marinade cool completely until adding the cod in a plastic bag.
Let the cod marinate for 24-48 hours. The flavor deepens!
When ready to cook, pre-heat the oven to 400 degrees. Add the cod to an oven safe pan and I like to add some of the marinade over the fish so I can spoon some over the fish after it’s done.
Depending on how thick your fish is, cook the cod for 8-10 minutes then broil on high for 2 minutes. Tip: cod can overcook VERY quick so be careful not to go over because then the fish is tough and rubbery.
