This is an ode to the NYC iconic pizza place, Artichoke Pizza!

I’ve spent many of 3am nights waiting for a slice of this pizza with my sister friends & roommates, Kelli & Ash. It’s a very weird mix of creamy bechamel white sauce with lots of cheese, spinach and artichoke. Kinda like a mix between spinach artichoke dip on a pizza lol - perfect for hangover or if you’re just craving a pizza slice.

Ingredients - makes 8 slices

  • 1 medium dough from your favorite pizza shop or local grocery store

  • 1/2 cup all purpose flour

  • 6 tablespoons of unsalted butter

  • 2 cups of whole milk, bought to room temp (or more depending on your bechamel sauce)

  • 1 garlic clove, finely grated

  • 2 cups freshly grated parmesan cheese

  • 1 & 1/2 cup of fresh spinach

  • 1 can marinated artichokes hearts (the small can is fine if you can find it)

  • salt & pepper, to taste

    Directions

  • Pre-heat oven to 525 degrees.

  • Roll/stretch out your dough and add it to a tray covered with parchment paper.

  • In a deep stock pot on medium heat, melt the unsalted butter. Once it starts to bubble and it smells a little nutty add the 1/2 cup of AP flour and stir continuously. It will be very thick and almost look like thick mud-ish. Cook for about 2 minutes but careful not to burn the flour.

  • Slowly pour in your whole milk and continuously stir. I like to add the milk a little in at a time because you are continuously stir ring so it turns into a thick white sauce. It will take about 5-7 minutes, depending on your stove. Once it fully coats the back of your spoon and you can swipe your finger down the middle of the spoon and the sauce separates and stays separated, it’s done! Think like it’s about to be a cheese sauce!

  • Grate a garlic clove in the sauce, slowly add the parmesan cheese so it melts within the bechamel sauce and combines into one!

  • Add the 1 & 1/2 cup of spinach until it wilts.

  • NOTE: Depending how long it takes to melt your cheese and add the spinach, your sauce may get too thick so just lower the heat so it doesn’t continue to cook too much and get too thick. You can always add a little more milk to thin it out.

  • Spoon your sauce onto the dough. Be careful not to add too much, you don’t want a super sauce-y pizza because then the crust at the bottom will be soft & gooey - gross!

  • Place the artichokes hearts on top of the sauce. Grate more parmesan cheese on top because obviously!

  • Cook the pizza for about 10-12 minutes. Since your oven is on high heat it will cook quick!

  • Eat piping hot and sprinkled with more cheese!
