Sooooo I don’t know if you could tell but I love a damn sandwich!

I made this virtually for the Black Women Talk Tech Conference and after snapping this pic, I devoured it with creamy burrata cheese and tomato jammy jam dripping down my fingers (and face lol) - it was bomb!

I love making this quick tomato jam because it’s super easy and you can put it on anything. I spread it on a bacon egg and cheese for breakfast sometimes, it’s so good!

Also, the key to a good grilled chicken sandwich is doing a wet salt brine for 15 minutes and pounding the chicken evenly so it cooks evenly and one side is not undercooked and the other side is overcooked - no bueno! Thanks to The Kitchenista for this great tip - check out her tutorial here

Ingredients

  • 2 chicken breasts, pounded evenly so they are the same thickness across

  • 1/4 cup kosher salt dissolved in 4 cups of cold water

  • Note: whatever everyday seasoning you like but I would so anything low sodium or use very little kosher salt when doing seasoning your chicken after the wet brine. It will already be seasoned with salt & very juicyyyyy! Let the chicken soak in the salt brine for 15 minutes

  • 1 container of burrata cheese, cut open

  • 1 cup of cherry tomatoes

  • 4 cloves of garlic, finely minced

  • 2-3 tablespoons unsalted butter

  • salt & pepper to taste

  • Avocado or grape-seed oil for grilling your chicken (this oil is good for grilling)

  • Arugula for toppings

  • Ciabatta toasted rolls or whatever you prefer

  • Kosher salt & black pepper, to taste

    Directions

  • After your chicken is in the wet brine for 15 minutes and seasoned, heat your grill or cast iron pan with some avocado oil on medium heat. Grill your chicken depending on your thickness about 3-4 minutes each side until it reaches 165 degrees and let it rest so the juices redistribute. This is why it is important to pound it evenly so the chicken breasts are the same thickness and cooked evenly.

  • For the tomato jam get a small non stick or a cast iron pan and and turn the heat on your stove on medium high.

  • Add the tomatoes to a dry pan with no oil. We want the tomatoes to get a good char on them. Depending how intense your stove is it can take up to 2-5 minutes to get a good char on both sides.

  • Once they are charred lower the heat to medium and start smashing them with a wooden spoon so the they burst open.

  • Quickly add the butter and garlic and stir to combine and cook until all garlic is fragrant and everything is well combined AKA nice and jammy! Season with salt & fresh cracked black pepper!

  • To serve, spread the tomato jam on the bottom bun then add the ooey gooey burrata cheese, top with the chicken and arugula for some greens!
