copycat popeyes spicy chicken sandwich
My recipe for the iconic spicy chicken sandwich from my Access Hollywood appearance! Try it below and let me know what you think!
Ingredients
2 pieces boneless, skinless chicken breasts (pounded evenly and if too large cut in half)
Dill sandwich pickles
Potato buns
Marinade
1 cup buttermilk
⅓ cup crystals hot sauce
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon cayenne powder
1 teaspoon sweet paprika
1 teaspoon kosher salt
½ teaspoon black pepper
Note: dry seasonings/spices can be combined into one bowl and I can speak to it on set.
Flour Dredge
1 cup all purpose flour
½ cup cornstarch
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon sweet paprika
1 teaspoon salt
½ teaspoon black pepper

Spicy Mayo
½ cup mayo
1 tablespoon crystals hot sauce
1 teaspoon cayenne powder
½ teaspoon garlic powder

Directions
Combine mayo, hot sauce, cayenne powder & garlic powder and whisk together. Set Aside
Add buttermilk, hot sauce, garlic powder, onion powder, sweet paprika, cayenne powder, salt & pepper in a bowl and which to combine. Add the chicken to the marinade with tongs and fully coat. Note: for best results let chicken marinate for 24 hours.
Add flour, cornstarch, garlic powder, onion powder, sweet paprika, cayenne powder, salt & pepper and whisk together until well combined. Remove the chicken from buttermilk marinade and coat in the flour dredge on both sides until all covered
Add vegetable oil to a cast iron on medium heat. Let heat up until 350 degrees with a thermometer. Fry the chicken for 3-5 minutes on both sides or 5 minutes if fully submerged in the oil. Once done add to paper towels to drain excess oil
Take potato buns, add spicy mayo to the top & bottom bun, add pickles, add the fried chicken then place top bun on top.
