Black Eyed Pea Burgers

Ingredients

Black Eyed Pea Burger

·       1 15 oz can, black eyed peas (rinsed, drained & mashed)

·      ½ red pepper, diced

·       ½ yellow onion, chopped

·       2 garlic cloves, minced

·      1 teaspoon, adobo seasoning

·       1 teaspoon, salt & pepper

·      1 teaspoon, chili powder

·       Dash or two of hot sauce

·       1 egg,

·      ¼ cup seasoned breadcrumbs

·      1 pack of potato rolls

 

Chipotle Mayo

·       1/4 cup of mayo

·       1 small shallot

·       1 clove garlic

·       1 lemon, squeezed

·      1 teaspoon, old bay seasoning

 

Instructions

1.     In a bowl with a fork, mash the rinsed & drained black-eyed peas until all are mashed to your liking and you are able to form a ball of some sort.

2.     Add in all your chopped veggies – red pepper, garlic & onion

3.     Add in all your seasonings – S&P, adobo, chili powder & hot sauce

4.    Add in whisked egg & breadcrumbs

5.    If your mixture is still soggy, add in more breadcrumbs. You will know when it is ready when you can form the mixture into a patty.

6.     Heat EVOO on medium high heat. Fry patties two minutes on each side

7.    Chipotle Mayo – Add all ingredients in a food processor or blender, set aside

8.    Garnish burger to your liking – tomato, onion, lettuce, avocado, slice of cheese & chipotle mayo
