Tishy’s Famous Oxtail

  • 2 lb oxtail

  • 1 large yellow onion, diced

  • 1 red pepper, diced

  • 3-4 garlic cloves, minced

  • 1 tablespoon browning sauce

  • 1 tablespoon ketchup

  • 1 tablespoon worshestire sauce

  • 1 tablespoon balsamic vinegar

  • 1 teaspoon each, salt & pepper

  • 1 tablespoon adobo

  • 1 cube beef bouillon

  • 1 15oz can off butter beans

  • 1 cup of water

Instructions

  1. pre-season your oxtail with salt, pepper and adobo seasoning

  2. In a deep pot over medium high heat with a tablespoon of olive oil, brown the oxtail - 3 min each side until it gets a little crispy

  3. remove oxtail and set aside

  4. Lower heat to medium, add in garlic, onions and red pepper and saute for about 3-4 minutes. Add salt & pepper

  5. Add in oxtail

  6. Add in all seasonings - ketchup, browning, balsamic vinegar, worshestire sauce, beef bouillon cube, more adobo and mix together

  7. Add 1 cup of water and let the oxtail simmer for 3 hours (covered) until the meat starts to separate from the bone

  8. Constantly check since the water will evaporate from simmering

  9. Continue to taste to see if it needs more salt or pepper

  10. Last 20 minutes add the butter beans

  11. Serve over rice & enjoy!
