Thai Basil Chicken
Thai basil chicken! this is one of my faves from my mom. she would call it her lazy dish because it took no time but it was soooo good with all the sauce on the rice and even better with a fried runny egg on top! if you can’t find thai basil (like me) i just used regular basil from my local grocery store.
Ingredients
-1 lb ground chicken
-4 tablespoons oyster sauce
-2 teaspoons soy sauce (or more)
-1 teaspoon thick soy sauce (amazon or your local international market)
-2 teaspoons brown sugar
-2 thai red chilies, finely chopped
-6 garlic cloves, finely grated or chopped
-a handful of thai basil or regular basil
-a dash of apple cider vinegar for some balance
Directions
-in a bowl add soy sauce, thick soy sauce, brown sugar and oyster sauce and a dash of ACV. stir to combine and set aside
-in a sauté pan on medium heat with some olive oil add the thai hot chilis and the garlic, sauté for about 2 min.
-add the chicken, break it up as the chicken is cooking. when the chicken is almost done, add the sauce, stir to combine and let the flavors simmer for about 5 minutes. let it get THICK & SAUCY!
-add the basil, stir to combine & serve with steaming hot white rice!
-bonus: serve with a runny fried egg! 🔥
