homemade chicken soup! haven’t been cooking a lot this week since I caught a cold because of the drastic ass change of weather here in nyc (it’s cold season y’all so be careful)...it’s also comfort food season so this soup just made me feel better (mentally)...not sure if chicken soup actually works for a cold lol but felt like my mom made it! recipe below ❤️

Ingredients (serves 4)

-2 chicken breasts (skin on & bone in)

-1/2 yellow onion, roughly chopped

-3 stalks celery, roughly chopped

-2 carrots, roughly chopped

-1 small potato, peeled & diced

-3 bay leaves

-a couple of sprigs of fresh thyme & sage 

-2 cups chicken stock (unsalted)

-1 habanero pepper

-1 teaspoon smoked paprika 

-salt & pepper (and whatever else you feel like)

Directions

-season chicken with lots of salt & pepper

-in a large stock pot or dutch oven with olive oil, add the celery, onions & carrots and sauté for about 2 min. season with salt, pepper & paprika.

-add the habanero pepper, potato, sage, thyme & bay leaves, stir to combine and then add the chicken on top of the veggies

-add the chicken stock and cover for 30 minutes

-once chicken is done, shred the chicken and add it back into the pot (save the bones & skin for chicken stock) 

-stir to combine and taste for seasoning

-enjoy with a couple of dashes of hot sauce!
