Quarantine Coconut Curry Crab Legs

  • 1/2 lb crab legs  (or what you can find)

  • 1 can coconut milk (do not dare get reduced fat)

  • 1-2 tablespoon hot curry powder 

  • 1/2 yellow onion, thinly sliced 

  • 3 garlic cloves, thinly sliced 

  • 1-2 teaspoons brown sugar 

  • Salt & pepper to taste 

  • 1 tablespoon green seasoning (super optional)

  • 1 whole habanero pepper (optional)

  • Cilantro, for garnish 

Directions:

  1. On medium heat sauté onions & garlic in EVOO for about 3 min, season with salt & pepper

  2. Add curry powder, mix to combine

  3. Add coconut milk & brown sugar, stir to combine. 

  4. Bring to a simmer to let flavors combine (10 min max), taste to adjust seasonings. Add more salt & pepper if needed.

  5. Add in crab legs, cover & let steam (6 min) 

  6. Sprinkle cilantro on top to serve!
