Coconut Curry Crab Legs
Quarantine Coconut Curry Crab Legs
1/2 lb crab legs (or what you can find)
1 can coconut milk (do not dare get reduced fat)
1-2 tablespoon hot curry powder
1/2 yellow onion, thinly sliced
3 garlic cloves, thinly sliced
1-2 teaspoons brown sugar
Salt & pepper to taste
1 tablespoon green seasoning (super optional)
1 whole habanero pepper (optional)
Cilantro, for garnish
Directions:
On medium heat sauté onions & garlic in EVOO for about 3 min, season with salt & pepper
Add curry powder, mix to combine
Add coconut milk & brown sugar, stir to combine.
Bring to a simmer to let flavors combine (10 min max), taste to adjust seasonings. Add more salt & pepper if needed.
Add in crab legs, cover & let steam (6 min)
Sprinkle cilantro on top to serve!
