Jamaican Coconut Curry Shrimp

Ingredients 

•1 lb shrimp, peeled & deveined 

•1/2 onion, finely chopped

•1/2 red pepper, finely chopped

•1/2 green pepper, finely chopped

•3 garlic cloves, finely minced

•2 green onions, finely chopped (optional)

•1 habanero pepper, whole (optional if you like spice)

•2 tablespoons hot curry powder (your fave brand)

•1 small potato, skinned & diced 

•2 teaspoon honey or brown sugar 

•1 can coconut milk (not non fat!)

•salt + pepper to taste 

How to

•season shrimp to your liking and set aside for 20 min. With 1 tablespoon of oil sauté the onion, garlic, green & red peppers & green onions for 3-4 minutes. Season with salt & pepper. 

•add curry powder & mix to combine. add coconut milk with teaspoon of honey/brown sugar, habanero pepper & potatoes. Let simmer for 10-15 minutes. 

•taste for more seasoning! Once potatoes are done, add shrimp to cook for last 2-3 minutes until pink. Serve with rice!
