orzo pasta salad
This past weekend was my 33rd bday (omg I can’t believe I’m saying that) anddddd I made a little announcement that I quit my job so I’m fully diving into JAHS! I shared about it in my newsletter if you want to give it a read.
Anyway, I had a small bday gathering with some close friends on my rooftop and despite the wind trying to hate on us, it was a really, really great time. I cried real tears about my next chapter but just had a really good time and I paid for it the next day. HUNGOVER! lol
Of course I cooked and made my go to orzo pasta salad that I love to snack on throughout the week. It’s super simple and you can customize it however you want. It’s beyond easy and instead of using Try it below!
Ingredients
1 lb box of orzo pasta
1/2 seedless cucumber, chopped into bite size pieces
1 pint of cherry tomatoes, halved
1/2 red onion, chopped
1 block of feta cheese, crumbled with your hands
1 cup fresh basil leaves, roughly chopped
1 8oz can pitted kalamata olives
1/2 cup or so extra virgin olive oil or avocado oil
1/4 cup red wine vinegar
1 lemon, juiced
kosher salt, fresh cracked black pepper & red pepper flakes (optional if you don’t like spicy)
Directions
Cook the orzo according to box instructions. Drain and add into a big bowl.
Add all ingredients to a bowl and generously season with salt & pepper. Pasta loves salt so before to liberally salt it to taste.
