Ever since the pandemic hit, I’ve been missing all my lunch spots that me and my co-workers would go to and spend $14 lol. Well not the spending the money part but the food!

Cava was my spot! When I was home for my best friend’s wedding in March I went to visit my HS bestie, Kay and her two beautiful twins. We shot some content and recreated a Cava bowl for her since she’s a busy mom, fashion content creator and a teacher! Whew, she wears lots of hats! Also, one of the twins actually LOVED the bowl so it’s toddler approved! lol

We made a quick & simple vinaigrette and a tomato & red pepper salad. My weeknight trick is using rotisserie chicken from the local grocery store because it’s really good & flavorful! Don’t sleep on rotisserie chicken! Honestly, you can add any toppings you want but this was Mediterranean inspired!

Ingredients (Makes 2 bowls)

  • 1 rotisserie chicken, cut into cubes (I used 1 breast for two bowls)

  • 1 can chickpeas, drained

  • 1 can kalamata olives, drained

  • 1 block of feta cheese, crumbled

  • Any type of greens you like! I used a mixed green salad

  • 1 cup of brown rice

Tomato & Red Pepper Salad

  • 1 small pint cherry tomatoes, halved

  • 1/2 seedless cucumber, chopped into bite size pieces

  • 1/2 red pepper, chopped

  • 1/2 small red onion. chopped

  • 1/4 cup parsley, chopped

  • 1/2 lemon, juiced

  • salt & fresh cracked pepper, to taste

  • Simple Vinaigrette

  • 1/2 small shallot, finely chopped

  • 1 teaspoon dijon mustard 

  • -1/4 cup red wine vinegar or apple cider vinegar 

  • 1/2 cup EVOO

  • -1 garlic clove, finely grated or minced

  • -salt & fresh cracked pepper, to taste

  • Directions

  • Tomato & Red Pepper Salad: Combine all ingredients in a bowl and stir to combine. Taste to see if you want to add more salt & pepper

  • Vinaigrette: combine all ingredients in a mason jar and shake or combine all ingredients except the EVOO in a bowl and gradually whisk in the EVOO like a crazy person so it emulsifies and combines together into a dressing! (keep this in your fridge in an air tight container)

  • Assemble your Cava bowl with & pour dressing over your salad and add any toppings you like!
